Apple Cobbler

Ingredients

Crust
    • ½ cup almond flour
    • ½ cup coconut flour
    • ¼ cup coconut oil, melted
    • 1 tsp vanilla extract
Filling
    • 2 apples, sliced (we recommend Cortland, Empire, or Fuji)
    • 1 Tbsp ground cinnamon
    • 1 Tbsp coconut oil, melted
    • 2 Tbsp freshly squeezed lemon juice
    • 1 Tbsp monk fruit sweetener
    • 2 Tbsp maple syrup
Topping
    • ¼ cup almond flour
    • 2 Tbsp coconut flour
    • 1 Tbsp ground cinnamon
    • 1 tsp monk fruit sweetener
 

Directions

    1. Preheat oven to 350º F.
    2. Combine crust ingredients in a large bowl and spread evenly into a sprayed 9 in. x 13 in. baking dish. Press until crust is packed.
    3. Bake crust for 10 minutes.
    4. Mix filling ingredients in a separate bowl, then add to par-baked crust. Bake for an additional 20 minutes.
    5. Combine topping ingredients in a small bowl. Sprinkle over baked filling.
    6. Return cobbler to the oven for 10 minutes, broiling for the last 1-2 minutes, or until the top is golden brown.
