Total Time: 5-10 minutes
- ½ Fuji or Gala apple, diced
- ¼ white onion, diced
- ½ jalapeño, diced (with or without seeds)
- 2 Tbsp red wine vinegar
- 1 mango, diced
- 3 Tbsp cilantro, roughly chopped
- ½ lime, juiced
- Salt and pepper to taste
- Add white onion and jalapeño to a bowl and mix with vinegar. Let sit for at least 5 minutes (this will quickly pickle the ingredients).
- Add apple and remaining ingredients. Toss and serve with your favorite tortilla chips.
