"Taste the Rainbow" Sandwich

Prep Time: 5-10 minutes
- ½ EverCrisp® or Honeycrisp apple, thinly sliced
- 2 slices of whole grain bread
- Plain hummus, to taste
- ½ ripe avocado, mashed
- 1 small carrot, peeled and julienned
- ½ cup red cabbage, shredded
- Handful of kale, deveined
- Salt and pepper to taste
- Spread hummus on one slice of bread and mashed avocado on the other.
- Sprinkle salt and pepper to taste over the avocado side.
- Pile apples, carrots, cabbage, and kale on the hummus side.
- Sandwich both sides together. Cut in half and enjoy!
