Apples

    • 2 apples, peeled and thinly sliced (we like Ambrosia, Cortland, Fuji, or SnapDragon®)
    • 1 Tbsp dark brown sugar, packed
    • 1 tsp lemon juice
    • 1 tsp water
    • ½ tsp ground cinnamon
    • ½ tsp ground ginger
    • ¾ cup (1½ sticks) unsalted butter

Blondies

    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • 1 tsp baking soda
    • ½ tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • ¼ tsp salt
    • 1½ cups dark brown sugar, packed
    • ¾ cup (1½ sticks) unsalted butter, melted and cooled
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup chopped pecans

    Directions

    Apples

      1. In a small saucepan over medium heat, add apples, brown sugar, cinnamon, and ginger. Stir and cook until apples have softened, about 5 minutes. Remove from heat and set aside.

    Blondies

      1. Preheat oven to 350° F. Line bottom and sides of a 9 in. x 13 in. baking dish with parchment paper and set aside.

      2. In a medium-sized bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
      3. In a separate medium-sized bowl, whisk together brown sugar, melted butter, eggs, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
      4. Fold in apples and pecans and mix until incorporated. Batter will be very thick.
      5. Spread batter evenly in the prepared baking dish. Bake for about 30 minutes or until a toothpick inserted in the center comes out clean.
      6. Remove from oven and allow to cool on a wire rack before cutting into squares and serving.
